Grain Free Chocolate Chip Cookies
Our guilt free version of grain free chocolate chip cookies is here!
Ingredients
1/2 cup Kerry gold butter
1/4 cup Lakanto Golden
1/8 cup Lakanto Classic
1 tsp vanilla extract
2 large egg
2 1/4 cup almond flour (I prefer super fine and I use this
1/4 cup unflavored whey protein isolate I use this
1 cup sugar free chocolate chips I use this
1/4 tsp salt
1/2 tsp baking soda
Instructions
Preheat oven to 350 F
In a mixing bowl, mix together butter, sugars vanilla and eggs
Add almond flour baking soda and salt and chocolate chips
Line baking sheets with parchment paper and using an ice cream scoop, scoop cookie dough and drop to cookie sheets 2 inches apart.
Bake 11-16 mins or until golden brown on the sides and top and firm to touch.
Notes
This recipe makes 24 medium sized cookies.
Please note that this recipe is using flour substitute so consistency may be different from the cookies that we are accustomed to before our grain free way of eating. Please adjust your expectations.
Lastly, DO NOT USE wax paper. Wax paper and parchment paper are different. Wax paper is not meant to be used in electric and/or gas ovens. Bake cautiously 😉
