Sugar Free Chorizo
Ingredients
2 lbs ground pork
3/4 cup brown sugar substitute I use this
1/4 cup minced garlic
1 tbsp salt
1 tbsp ground pepper
Instructions
Combine ingredients in a mixing bowl
Refrigerate for 2 hours
Cut cling wrap to 8x5 inches (you may need 20 pcs)
Scoop about 2 oz of seasoned ground pork (about 3 tbsp) and roll on the plastic wrap
Tighten edges by twisting both sides
Refrigerate for another 30 mins
Freeze remaining chorizo links
Notes
In a medium heat, bring chorizo to boil until juice is reduced (use 1/4 cup water)
When caramelisation begins,, pour some cooking oil (a tbsp) and stir
This recipe contains sugar substitute and will easily burn. Don't leave unattended.
For Paleo option, replace sugar substitute with 1/2 cup honey
